Usage Directions:
It can be used as a 1:1 replacement for gelatine powder in a recipe. Just like gelatine, it needs to be ‘bloomed’ in the cold liquid before heating. For every cup of liquid you want to set use 1 teaspoon agar. Mix with the cool or cold liquid, bring to a simmer while whisking then pour into an ungreased mould. Refrigerate or leave on the bench until set. Use less agar (or more liquid) for a softer set or if you will be serving it fridge cold. If setting acidic ingredients like cranberry, lemon or pineapple increase the agar agar slightly. Egg white substitute per egg: mix 1 tablespoon agar agar in 1 tablespoon of water. Use an immersion blender or whisk to vigorously whip the mixture, then put it in the fridge to chill. Once cool whip it a second time.

Store below 25°C and away from direct sunlight.
